He has consulted on restaurant concepts in Bahrain, Italy, Germany and Greece.
He has written the menus for a Peruvian bistro, Mediterranean fine dining, casual Italian, a raw-food concept and a catering production in Greece.
Openings and kitchen organisation
He opened the first Anantara hotel in Italy, Anantara Palazzo Naiadi in Rome: three restaurants, two bars, in-room dining, banqueting for up to 300 and a kitchen team of 40. He launched INEO, which gained a MICHELIN star in 2026.
At The Ritz-Carlton Bahrain he ran 14 restaurants and lounges with 100 staff, and relaunched the Italian fine-dining restaurant Primavera.
Events and pop-ups
In Monte-Carlo he led the pop-up “Odyssey” at Hotel Metropole, for Heinz Beck and Joël Robuchon.
In Bahrain he opened three pop-ups: “Ammuri” (Lebanese), “Chalet” (Swiss Alps) and “Vivir” (Spanish tapas).
